Veggie Bite Fried Rice

VEGGIE BITE FRIED RICE

Serves 4 as part of a shared meal, or 2 as a main meal

Cooking time: 10 mins


INGREDIENTS

3 tbsp peanut oil
2 eggs, lightly beaten
2 cloves garlic, crushed
2 tsp grated ginger
1 cup frozen peas and corn mix
1 x 225g bag Yumi’s Veggie Bites (we used Sweet Potato & Herb), roughly broken up
600g cold cooked jasmine rice (you can also use microwave packet rice)
1 tbsp light soy sauce
1 tsp caster sugar
2 tsp oyster sauce
1 tsp sesame oil
Garlic chives or sliced spring onion, to serve
Sea salt and freshly cracked black pepper

METHOD

  1. In a small frypan add 1 tsp peanut oil over medium heat. Pour in the egg, swirl to coat the pan the cook until the egg is cooked through. Slide onto a plate then roll up tightly into a log and thinly slice.

  2. Heat remaining oil in a large frypan or wok over medium heat. Add garlic and ginger and fry until fragrant. Add peas and corn and cook for 2-3 mins then add broken Veggie Bites and cook for a further 2 mins, stirring constantly.

  3. Add rice and stir well then add soy sauce, sugar, oyster sauce and sesame oil. Season with salt then keep stirring until the rice is evenly coated.

  4. Add fried egg and garlic chives (or spring onion) and toss quickly then divide between bowls to serve.
