FALAFEL STUFFED CAPSICUM WITH TABOULEH

Serves 2 as side dish, 1 as main
Prep time: 10 min
Cooking time: 15 - 20 min


INGREDIENTS

2 scoops Yumi’s Classic Hommus
4 Yumi’s Classic Falafels
1 capsicum, halved, cleaned and oiled
1 scoop of cooked rice
1 scoop tabouleh (recipe below)
Herbs to garnish

METHOD

  1. Bake capsicum halves at 180˚ for 10 mins

  2. Crumble falafels into bowl with cooked rice and combine. Season to taste

  3. Drain excess fluid from baked capsicums & stuff with falafel mixture

  4. Return stuffed capsicums to the oven for a further 10 mins or until capsicum is charred to your liking

  5. Remove stuffed capsicums fom oven and serve on a bed of fresh tabouleh and hommus

TABOULEH

Finely dice equal parts parsely, tomato, cucumber and red onion. Mix with equal part quinoa, a squeeze of lemon juice & pinch of salt.
