VEGGIE BITE FRIED RICE
VEGGIE BITE FRIED RICE
Serves 4 as part of a shared meal, or 2 as a main meal

INGREDIENTS
3 tbsp peanut oil
2 eggs, lightly beaten
2 cloves garlic, crushed
2 tsp grated ginger
1 cup frozen peas and corn mix
1 x 225g bag Yumi’s Veggie Bites (we used Sweet Potato & Herb), roughly broken up
600g cold cooked jasmine rice (you can also use microwave packet rice)
1 tbsp light soy sauce
1 tsp caster sugar
2 tsp oyster sauce
1 tsp sesame oil
Garlic chives or sliced spring onion, to serve
Sea salt and freshly cracked black pepper
METHOD
- In a small frypan add 1 tsp peanut oil over medium heat. Pour in the egg, swirl to coat the pan the cook until the egg is cooked through. Slide onto a plate then roll up tightly into a log and thinly slice. 
- Heat remaining oil in a large frypan or wok over medium heat. Add garlic and ginger and fry until fragrant. Add peas and corn and cook for 2-3 mins then add broken Veggie Bites and cook for a further 2 mins, stirring constantly. 
- Add rice and stir well then add soy sauce, sugar, oyster sauce and sesame oil. Season with salt then keep stirring until the rice is evenly coated.
